Last fall, after plenty of anticipation, Timothy Felkner opened Oro in San Francisco’s Mint Plaza. It was his fifth restaurant opening to date, but this project was different: for the first time he was an owner of the restaurant he was starting, not a partner or a GM.
Timothy is the founder and CEO of Vigilante Hospitality, a restaurant consulting and management company focused on growing businesses. Before Oro, he was the opening GM at San Francisco’s Zero Zero, where he ultimately became a partner. We asked Timothy all about making the jump to owner — how it changed his approach, surprises and challenges, and his best advice for first-time restaurateurs.
